DŌ DELI
*Scalable Brand Beverage Concept and Implementation
DŌ DELI is an artisanal ‘scratch bakery’ and coffee local with a small ever-changing deli for gifting and take home goods that blend wholesome delights and a vibrant sense of community to bring about those feel-good human moments. Positioned to become an institution and a local morning stop for the neighborhood, or business travelers looking for a quick satiating pre-game bite.
We worked on the entire beverage concept from start to end. From drink offering development, supplier collaboration, drink styling and shoot direction, development and direction of video shoot for training materials, pre opening site implementation and post opening site collaboration, training and wine list direction and curation.
FIRMDALE HOTELS

Firmdale Hotels was founded by Tim and Kit Kemp and comprises eleven luxury hotels and nine restaurants across London and New York.
Work here began at the end of 2021. The role has included refinement of wine offering, extensive wine training across the group to build wine culture and ethos. This included a bespoke wine course for the group to provide extensive, contemporary wine education for key team members.
WE ARE EDN

WE ARE EDN stands for the three pillars of Engage, Develop, Nurture. This is a new brand for DoubleTree by Hilton that talks directly to our guests’ social and ethical consciences, and collective love of nature, sense of belonging and modern lifestyles.
Menus are fresh, familiar and comforting and served with a smile. Food and beverage lists major on a broad range of international favorites, and trend driven foods – over-indexing on bold flavors, flexitarian, vegan and no/lo dishes and drinks. Presentation is colorful and bright, with generous serves and strong visual appeal.
We managed the entire beverage concept from ideation through ongoing support. We developed a bespoke drink library, coordinated with suppliers, and directed all drink styling and photoshoots. We also produced and oversaw training video content, executed seamless pre‑opening site implementation, and provided continued post‑opening collaboration. Finally, we delivered comprehensive staff training and expertly curated the wine list to align with the venue’s brand vision and elevate the guest experience.
